PRESERVED FOODS DEPARTMENT

Entry Period: FRIDAY AND SATURDAY, July 19 and 20, 9 am to 5 pm

TUESDAY, July 23, 9 am to 5 pm

WEDNESDAY, July 24, 9 am to 1 pm 

       Judging: Wednesday, July 24 at 1:30 pm

 

IMPORTANT – PLEASE READ! 

Failure to adhere to guidelines will result in disqualification

Junior and Senior category entries of High Acid Foods: including Vegetables (Div H), Meat (Div L), Fish (Div M), and Soups and Sauces (Div O) will be judged by APPEARANCE only. 

Professional entries should be approved for commercial sale, and may be tasted during judging.

  • All entries must have been prepared by the exhibitor within the past year.
  • Containers must be standard canning jars with 2-part lids, and labeled with identity of product, preservation method, USDA or ADEC approved processing time, and date of processing. 

(Example: Smoked Salmon, 11# Pressure, 110 minutes, 8/11/18)

  • All entries with incomplete or inaccurate labels, or non-USDA approved processing method or time, will result in disqualification.
    • Dried food exhibits may be submitted in plastic bags.
    • Recipe or list of ingredients must be attached to each entry.
    • Enter one (1) jar.
    • Jars and bottles will be recycled unless specified.
    • All entries in Division R Beverage should be submitted in clean, appropriate bottles no larger than one (1) quart; two (2) bottles of beer per entry, one (1) bottle of wine per entry
    • Please specify on label if entry needs to be chilled prior to judging
    • The use of paraffin is no longer USDA approved.

  • Entries for the purpose of display and education only are welcomed, encouraged, and will not be judged.
